Oatmeal! By now you must have noticed that this is a staple food here at the Your Super Office :D We just can't get enough! And we love to play around with different flavor combinations, from chocolate to matcha... there's a recipe for everybody's liking.

Today we want to share this delicious and easy Carrot Cake Oatmeal recipe, which is just perfect for fall! Comforting, warm and with a lot of delicious spices.

Our Plant Protein mix adds a good amount of protein to keep you full longer and provide your body with all the essential amino acids. Try it  it really is finger lickin' good (for you)!

CARROT CAKE OATMEAL

SERVES 1 | VEGAN, GLUTEN-FREE

Ingredients:

  • 2 tbsp Plant Protein mix
  • 1 large carrot, grated
  • 1½ cups water
  • 1 cup oats
  • 2 tbsp maple syrup
  • 2 tbsp raisins
  • 1 tsp ground cinnamon
  • ¼ tsp ground ginger
  • ¼ tsp ground nutmeg
  • ¼ tsp vanilla powder
  • toppings (optional)

Directions:

  1. Combine all of the ingredients (except the Plant Protein mix) in a small pot.
  2. Cook over medium heat, stirring often to prevent burning or sticking.
  3. Remove from heat and stir in the Plant Protein mix.
  4. Pour into a bowl and add toppings, if desired, and serve.
