Green Smoothie Recipe

SERVES 1 | VEGAN, GLUTEN-FREE

 

INGREDIENTS:

1 tsp Energy Bomb Mix

1 tsp Super Green Mix

½ apple, peeled

½ cup frozen mango

1 cup kale or spinach

1 cup almond milk

Ice (optional)

 

DIRECTIONS:

Put all ingredients in a high-speed blender and blend until smooth.

A SUPER SALAD

When I start to feel groggy or tired, I know it’s time for a nutritious lunch. I love how easy it is to make this tasty taco salad, plus it’s made with a mouth-watering avocado dressing that’s packed with vitamins and nutrients.

 

RECIPE

Taco Salad with Super Green Avocado Dressing

SERVES 1 | VEGAN, GLUTEN-FREE

 

INGREDIENTS:

1 cup mixed greens

1 cup brown rice

1/2 cup sweet corn

1 diced tomato

1/2 cup black beans

1/2 thinly sliced red onion

 

FOR THE DRESSING:

1 tsp Super Green Mix

1 ripe Avocado

1 clove garlic

1/2 cup water

Squeeze of fresh lime juice

salt and pepper to taste

 

DIRECTIONS:

Toss all the ingredients for the salad in a bowl.

Add all ingredients for the dressing except the Super Green in a blender. Mix until smooth and creamy and then add the Super Green. Stir well.

Spoon the dressing over the salad.

Enjoy!

Golden Mellow Buddha Bowl
SERVES 1 | VEGAN, GLUTEN-FREE

 

INGREDIENTS:

1 medium sweet potato, chopped

2 tbsp olive oil, divided

½ head of romaine lettuce, chopped

1/4 cucumber, diced

1 small carrot, shredded

½ block of smoked tofu, chopped

½ avocado, diced

1 cup cooked edamame (optional)

Sesame seeds for garnish

Salt and pepper to taste

 

MAPLE MUSTARD DRESSING

1 tsp Golden Mellow Mix

1 tbsp pure maple syrup

2 tbsp water

1 tsp mustard

Salt and pepper to taste

 

DIRECTIONS:

Preheat oven to 400°F.

Line a baking sheet with parchment paper and arrange chopped sweet potatoes evenly. Drizzle with 1 tbsp olive oil and season with salt and pepper.

Bake for 20 minutes or until the sweet potato is soft.

Add 1 tbsp of olive oil to a non-stick pan. Turn heat to medium and add chopped tofu. Fry tofu for 4 minutes on each side, or until golden brown.

To make the dressing, combine the ingredients in a small bowl and mix well.

Assemble everything in bowls and drizzle with the dressing. Enjoy!
