  • Combine all ingredients in a bowl and mix well
  • Line a baking dish with parchment paper.
  • Scoop the cookie mixture onto it with a spoon and form cookies with hands
  • Bake at 350°F for 30 minutes.
  • Optional: serve with a drizzle of peanut butter and berries

    I made these cookies and they are so good! I didnt have cashews so I used pistachios, and I threw a handful of vegan dark chocolate chips in there.
