RAW RASPBERRY CELEBRATION CAKE

VEGAN, PALEO, GLUTEN-FREE

Have you ever tried making raw cake? It's easier as you might think. We came up with this beautifulĀ berry cake to celebrate the launch of our new website and holy guacamole, this was delicious! It's very fruity and rich at the same time. Will satisfy any sweet cravings, guaranteed. For an extra boost of berries we added some of our Forever Beautiful Mix, which is made of chia seeds, acai berries, maqui berries, acerola cherries, maca and blueberries.     RAW RASPBERRY CELEBRATION CAKE

    INGREDIENTS FOR THE BASE:

    • 1Ā cupĀ dates
    • 1Ā cupĀ almonds

    INGREDIENTS FOR THE FILLING:

    • 2 tablespoonsĀ Forever Beautiful Mix
    • 1/2 cup raspberriesĀ raspberries
    • 1 cupĀ soaked cashews
    • 1/2 cupĀ coconut milk
    • 1/2 cupĀ coconut oil
    • 2 tablespoons. maple syrup

    INGREDIENTS FOR THE TOPPING:

    • 2 tablespoonsĀ Forever Beautiful Mix
    • 1 cupĀ raspberries
    • 3/4 cupĀ coconut milk
    • 2 tablespoons maple syrup

      DIRECTIONS:

      • Blend the ingredients for the base in a food processor and press into an 7" tin.
      • Place it in the freezer.
      • For the filling, start off by blending the cashews, coconut oil and coconut milk.
      • Once creamy, add the raspberries, maple syrup and Forever Beautiful Mix.
      • Pour your filling on top of the base and freeze again.
      • Combine all the topping ingredients in your blender and blend.
      • Pour over the slightly frozen filling.
      • Freeze for another 4-5 hours or overnight.
      • Enjoy!

      SUPER TIP:Ā Garnish with some fresh blueberries and coconut!
